Ingredients
⦁ 3 medium-sized Eggs (separated)
⦁ ¼ teaspoon of Cream of Tartar
⦁ 3 Level Tablespoons of Self-Raising Flour
⦁ 3 Tablespoons of Unsweetened Soya Milk
⦁ 1 Teaspoon of Coconut oil
⦁ 60 g Fresh fruit such as Blueberries

Method
- Place the egg yolks, Three Kings Pantry ‘Zero’ Ring Donut Syrup, self-raising flour and soya milk in a mixing bowl and whisk with a hand whisk until smooth.
- In a separate bowl, place the egg whites and cream of tartar and whisk with an electric hand whisk or electric food mixer (with balloon whisk attachment) until the egg whites form large and firm, but light peaks.
- Add spoonsful of the egg white to the egg yolk mixture and fold in until combined. N.B it’s important not to over-mix this batter otherwise all the air will disappear from the mixture.
- Heat a little coconut oil in a frying pan, over a low-medium heat and place large spoonsful of the batter into the frying pan. Leave for a few minutes to cook then flip over. Place a lid or large plate over the frying pan to ensure the pancakes are cook thoroughly. After a few minutes carefully remove the lid with oven cloths/gloves and repeat with the rest of the batter.
- Layer the pancakes up in stacks of 2/3 and cut a hole in the top one to create a well for the toppings.
- Place fruit of the top and drizzle with plenty of Three Kings Pantry Strawberry Flavour Syrup.
- Serve Immediately.
- Alternative Ingredients / Cook’s Notes
- The pancakes will deflate quite quickly when removed from the heat but will still have a light and fluffy texture.
